Sun-Dried Tomato and Goat Cheese Meatballs By Sweet Cheeks!
1 lb. ground grass-fed beef
1/4 cup crumbled goat cheese
1/4 cup sun-dried tomatoes, no oil
1/2 Tablespoon dried basil
1/2 Tablespoon garlic powder
2 teaspoons red pepper flakes
Sea salt and pepper to taste
1 egg, beaten
2 Tablespoons olive oil
In a large bowl, mix together beef, goat cheese, sun-dried tomatoes, basil, garlic powder, red pepper flakes, sea salt and pepper.  Then add in the beaten egg.
Heat the olive oil in a large skillet over medium-high heat.  Scoop out the meat, shape into golf ball sizes and add them to the skillet.
Cook on each side for about 5 minutes, until cooked through.

*Full Eva is 5 Rounds and will have a 45min time cap.  Everyone else does 3 Rounds.  Modified WOD is 3 Rounds: 800m Run or 100om Row, 20 Kettlebell Swings and Pull Ups.  Be smart and use the version that is most appropriate for your current level.
