My homemade curry!
What you will need:
Vegetables, lots of them:
onions
carrots
broccoli
mushrooms
Green beans
red peppers
For the curry sauce:
Butternut squash
Fresh Ginger- peeled and cut into large chunks for easy removal
Dried Galangal Ginger
Cumin
Coriander
Turmeric
Salt
Pepper
Crushed Garlic (From Trader Joes)
Lemon Grass- Left in long pieces so it’s easy to remove.
Thai Chili peppers-chopped and seeded (depending on how hot you like things)
Coconut milk- a can or two
coconut oil
I started by cooking my chopped onion in a pan with coconut oil, cooked until just soft. Then added in the dry spices. A good portion of each. Next add in coconut milk and mix well. Add in ginger, garlic and lemon grass and simmer for 5-10 minutes and add in cubed butternut squash. Cook until soft then mash squash into curry sauce. Then add in vegetables and Thai chili’s and cook until desired doneness. Taste and adjust seasoning as necessary!
Enjoy!
