Chicken Fried “Rice”
1 head of cauliflower
5 green onions, chopped
1 zucchini, cubed small
1 bell pepper, diced
2 chicken breasts, cubed small
Coconut oil
salt and pepper to taste
2 eggs
Coarsely cut up cauliflower up and steam it for 8 to 10 minutes until it’s soft. Drain out any excess water. Take a masher or fork and mash all of it up until it resembles rice. Set aside.
In a large skillet melt a spoonful of coconut oil over medium heat. Get the pan hot, add chicken and stir fry until cooked. Remove the chicken to a plate.
Add all the vegetables except the cauliflower to the skillet and cook until desired softness. Add the cauliflower and chicken and mix it all up. Crack the 2 eggs in and stir quickly to break the egg up and scramble it. Salt and pepper to taste.
