Recipe by Sweet Cheeks.
For one serving:
What you will need:
3 chicken breast tenders-baked and chopped very small
1 Tablespoon almond butter
Juice of half a lime
salt
water-enough to make dressing like dressing!
3-4 small Persian cucumbers
enough rice wine vinegar to soak them, but not cover them all
sesame seeds and that’s it!
1. Chop cucumber and put in a bowl, pour rice wine vinegar on them, cover and store in refrigerator, stirring occasionally to make sure each cucumber is covered. Marinate a couple hours or overnight.
2. In a small bowl whisk together almond butter, lime juice, salt and water. Add enough water to make the consistency of a sauce.
3. Then plate chicken with cucumbers, pour sauce over chicken and sprinkle with sesame seeds! Serve cold.
