IMG_5770Cauliflower Rice with a little Twist

Pulse the cauliflower in a food processor or blender.  Heat oil in pan, sauté minced garlic, add cauliflower, some salt/pepper, stir.  Add chopped cilantro and lime juice to your taste!  BOOM.

We made a bunch and it is delicious!  When I say WE, I mean LeeAnne made it for me.  I eat it for breakfast.  It’s a lot easier for me to eat first thing in the morning than broccoli or other veggies.  Let me know if you try it.
