Bacon & Red Curry Scramble – 10 min & DONE!



Bacon & Red Curry Scramble

Serves 2

Ingredients:
3-4 Pastured Eggs (Tara Firma Farms)
1/4c Red onion – diced
4 Swiss chard leaves – de-stemmed and diced evenly
3-4 slices of bacon – diced evenly (Prather Ranch)
1/4c Full fat coconut milk
1t Red Curry Paste (more or less depending on your spice tolerance)
1T + 1t Cilantro – Chopped
Avocado  – Topping

Directions:

  • In cast iron pan skillet (or whatever skillet you choose to use) turn stove onto medium heat
  • Add diced bacon
  • Fry up in pan for 5-7 min until all pieces are lightly brown
  • If your bacon rendered a lot of fat you can put some aside for later use (only if it’s from a pastured or good quality source – don’t render if it’s from commercial bacon.  If it’s commercial scoop off most of the excess in the pan before adding the veggies)
  • Add onion, cilantro and swiss chard into pan – stir – cook for 3-5 min
  • In a bowl whisk eggs, coconut milk & curry paste together
  • Pour over sauteed mixture and lower heat to medium-low and stir until desired egg consistency is completed.  I like mine a little runny so it’s not super dry.  Everyone has their own personal preference when it comes to eating scrambled eggs.
  • Serve onto plate and top with cilantro & avocado
  • Enjoy!
